2014 Shirley Chardonnay

The ‘14 Shirley Chardonnay is made from 100% Chardonnay aged 10 months entirely in neutral French oak barrels, a nose at first featuring pear and citrus opens up to a refreshing minerality. 70% malolactic fermentation gives the wine a creamy mouth-feel with just enough malic acid retained to give the wine a bright fruit presence. A refreshing white wine with a clean finish, it is perfectly well suited beside Monkfish served over rice pilaf and fresh zucchini.

Tasting Notes
The ‘14 Shirley is not a conventional Chardonnay, in the sense that we use the fruit and the winemaking tools to make the best wine possible, instead of making the best Chardonnay possible. In the place of a heavy oak extraction of a new barrel, we are going to prefer the light oxidation of a neutral one. In the place of putting the butter notes in the center of the profile, we stop the malolactic fermentation to prevent it to become predominant. Pear and citrus aromas enhance the brightness of the wine, with its minerality dominating the long finish.

Food Pairing Notes
The Shirley Plantation Chardonnay will pair very well with white meat, like veal en sauce, or a chicken salad but also grilled fishes.
