2015 Shirley Chardonnay
Made from 100% Chardonnay, aged 10 months entirely in neutral French oak barrels. The nose at first featuring pear and citrus opens up to a refreshing minerality. 70% malolactic fermentation gives the wine a creamy mouth-feel with just enough malic acid retained to give the wine a bright fruit presence.
A refreshing white wine with a clean finish, it is perfectly well suited beside Monkfish served over rice pilaf and fresh zucchini.
2019 Sabine Viognier
The 2019 Sabine Hall Viognier was made mostly in stainless steel with a portion aged in neutral French barrels. This Viognier has a nice floral nose reminiscent of honeysuckle, followed by soft stone fruits on the palate. The slight residual sugar gives to the wine a smooth, approachable mouth-feel.
The palate is complex with layers of citrus cream, wet stone and enough structure from the oak to allow for a multitude of food pairings. This Viognier is a pleasant wine that complements fish and seafood dishes.
2020 Gov. Fauquier
This off-dry wine, coming in at 1.5% residual sugar, is made from 100% Vidal Blanc, and is done entirely in stainless steel. A very citrus driven nose gives way to tropical fruit flavors on the palate. Melon and lychee are the dominant flavors on the front of the palate, with a distinct grassy and lemon finish.
The slight sweetness makes this an extremely versatile wine for food pairings, especially well-suited for spicier foods like Latin, Thai, and Japanese cuisine.
2020 Rosewell Rosé
This wine is made from 100% Chambourcin grape, aged in stainless, this wine is bursting with ripe fruit flavors of strawberry and melon distinctly found only in Rosé of Chambourcin. A medium to full bodied wine with moderate acidity makes it extremely approachable and refreshing.
Given its weight, it can be paired with richer foods – chicken, tomato-based dishes, and pork are an excellent match. Exceptional with a range of cheeses and cured meats, this wine is still delicate enough to pair nicely with a summer salad as well.
