2016 Shirley Chardonnay

The ‘16 Shirley is not a conventional Chardonnay, in the sense that we use the fruit and the winemaking tools to make the best wine possible, instead of making the best Chardonnay possible. In the place of a heavy oak extraction of a new barrel, we prefer the light oxidation of a neutral one. In the place of putting the butter notes in the center of the profile, we stop the malolactic fermentation to prevent it to become predominant. Pear and citrus aromas enhance the brightness of the wine, with its minerality dominating the long finish.
